Amuse - Smoked Cauliflower “Brandade” Crostini with Lemon and Herbs
For our amuse course we offer our vegetarian riff on the Spanish classic salt-cod brandade. We lightly smoke the cauliflower then simmer with potatoes, cream, lemon, thyme, garlic and bay leaf. 4pc per order.
Can be GF w/out crostini
Let cauliflower brandade come to room temperature. Spoon over crostini and garnish with provided fresh herbs.
